What's the deal with pumpkin pie?

There are an unusual number of Christmas songs that highlight a pastry shell filled with puréed gourd.

There’s a happy feeling nothing in the world can buy,
When they pass around the coffee and the pumpkin pie.

I met a men who lives in Tennessee, he was headin' for
Pennsylvania and some homemade pumpkin pie

Home for the Holidays, Perry Como

Later we’ll have some pumpkin pie
and we’ll do some caroling.

This just strikes me as very strange, since no branch of my family has ever considered pie - pumpkin or otherwise - part of the holiday feast. Usually we scrap the formal dessert entirely in favor of more cookies and lots of good coffee.

I guess "cookie" is much harder to rhyme than "pie".
